We launched our cake decorating workshops in 2009 to provide individuals
that wants to try a hand at cake decorating or for the professional that wants to
freshen
up on their skills. Let us show you how the professionals do things - all the tricks
of the trade are explained.
With our hands on workshops we keep our classes small so we can provide individual
attention to our students,
enabling them to obtain the best learning experience in the wonderful world of cake
decorating.
No question goes unanswered. We provide all materials and equipment
as well as a delightful lunch with good company. Plenty of parking available.

Basic Beginners Level Cake Decorating Workshops
CCA-110 The Beginning (1 day - 9am to 5pm) COST = $260
This is a pre requisite for all our classes. You will learn the fundamentals of cake decorating, trimming and levelling your cake, ganaching in preparation for covering a cake with sugar fondant.
Learn the art of preparing your fondant for your cake, rolling out the correct thickness of fondant as well as applying it to your cake and achieving straight sides and corners.
We will teach you how to finish off your icing and how to smooth and polish your cake the right way.
You will be involved in making the decorations for this cake in a hands on application. This will involve a number of skills, needed to make moulded sugar paste cutouts, these will go towards any other more advanced classes. Sugar moulded cutout will be demonstrated on the day as well as a 3D Bow. Class sizes are limited as we provide individual attention to all students.
All templates, instructions, recipes, as well as a thorough explanation on equipment/methods and where to purchase materials will be explained on the day.
This is the basic class for all those aspiring cake decorators who may want to go onto a more professional level or just for the hobbyist, doing cakes for family and friends.
All equipment and materials will be supplied as well as a mud cake and all written instructions, on the day.
Also included in the cost is refreshments and an enjoyable lunch.
Basic Intermediate Level Cake Decorating Workshop
CCA-210-1 Basic Intermediate Square Peelback with Figurine and/or
CCA-210-2 Basic Intermediate 2D Sculpture of a Lazy Dragon (Image to follow) (1 day - 9am to 4.30pm) COST = $300
Not suitable for beginners. This is the second step in our choice of classes. Minimum number of students only to provide individual attention.
Requirements are Beginners CCA-110 or apply for an exemption based on previous experience. A written submission and portfolio of your cakes will need to be viewed for assessment.

This class will teach you how to prepare a cake for a 2D creation. You will be shown how to trim and shape your cake, apply a layer of ganache that will define your design and lastly how to apply the final coat of sugar fondant, moulding and sculpting the finer details. You will be shown how to completely make all the components with ease as well as an introduction to air brushing and applying coloured shimmer to your cake. Class sizes are limited.
This is an ideal class to do if you are interested in eventually doing 3D sculptures as it introduces you into the world of cake sculpturing.
All equipment and materials will be supplied as well as a mud cake for carving and all written instructions, on the day.
Also included in the cost is refreshments and an enjoyable lunch.
Intermediate Advanced Level Workshop
CCA-220-1 Advanced 2 Tiered Round MadHatter (2 day - 10am to 4pm) All up COST = $750
This is an advanced level workshop. Advanced students or professionals only. Requirements are Intermediate Basics CCA-210 or apply for an exemption based on previous experience. A written submission and portfolio of your cakes will need to be viewed for assessment.

This class will teach you how to prepare the most complex designs to cut and cover. We will share the secrets of making the perfect MadHatter and controlling your shape. You will be shown how to trim and shape your cake, apply a layer of ganache that will define your design and lastly how to apply the final coat of sugar fondant and show you tips of evenly applying strips to such a wonky shape. You will be shown how to completely make all the components with ease.
All equipment and materials will be supplied as well as a mud cake for carving and all written instructions, on the day.
Also included in the cost is refreshments and an enjoyable lunch.
